Like such a big deal

This doesn't have anything to do with travel or yoga or fashion or journalism schools BUT it really is such a big deal. I baked today. I never bake. So it's huge and it actually turned out. It's soo freaking good I'm going to eat the entire thing. It's banana bread from my mommabear's dope cookbook. Here's the recipe:

BANANA APPLESAUCE BREAD

If you are like most of us there are always a few brown spotted bananas lying around the kitchen. If I can’t use them up right away I throw them in the freezer for use later. This recipe makes good use of overripe bananas. To thaw frozen bananas, place them in a sink of cold water. Cut the tough stem off the top after 5 minutes and squeeze thawed banana into a measuring cup. It’s easy and rather fun to do!

Ingredients:
1 cup (240 ml) all purpose flour
½ cup (125 ml) whole wheat flour
½ cup (125 ml) amaranth flour or flour of your choice
½ cup (125 ml) packed brown sugar
1 tablespoon (15 ml) baking powder
1 teaspoon (5 ml) cinnamon
¼ teaspoon (1.25 ml) baking soda
4 egg whites beaten until fluffy
1 cup (240 ml) mashed bananas
½ cup (125 ml) buttermilk or skim milk soured with 1 tablespoon lemon juice
1/3 cup (80 ml) unsweetened applesauce
1 teaspoon (5 ml) vanilla
½ cup (125 ml) chopped walnuts
½ cup (125 ml) raisins
1 tablespoon (15 ml) grated orange zest

Method:
Preheat oven to 350oF (177oC). Lightly coat a 9 x 5 inch loaf pan with Pam or non-stick cooking spray and dust with flour. In large bowl combine dry ingredients. In another medium bowl, beat egg whites until fluffy. Prepare soured milk at this time if using instead of buttermilk. Then, pour bananas, buttermilk (or soured milk), applesauce and vanilla into a medium bowl. Add dry ingredients to wet and mix until just blended. Add walnuts, raisins and grated orange zest. Pour into prepared loaf pan. Bake for 55 minutes.
